Ingredients

  • 2-1/2 cups almond flour
  • ¾ tsp baking soda
  • ½ tsp sea salt
  • 3 large eggs
  • cup mashed very ripe banana
  • 2 Tbs honey
  • 2 Tbs coconut oil melted
  • 1 tsp vinegar white or cider
  • 1 tsp vanilla extract
  • Zest from 1 orange
  • 1 cup raspberries

Instructions

  • Preheat your oven to 350°F (175°C). Prepare a standard 12-cup muffin tin by thoroughly oiling 10 of the cups or lining them with paper liners. This ensures your delicious muffins won’t stick!
  • In a large mixing bowl, combine the wet ingredients: eggs, mashed ripe banana, honey, melted coconut oil, vinegar (white or apple cider), vanilla extract, and fresh orange zest. Whisk these ingredients together on a low setting until they are thoroughly combined and smooth.
